Yessica Trujillo-Macary, second from right, Mayor Ben Blake, center, and members of the Chamber of Commerce, including Pam Staneski at far right, who will take over as chamber director Monday, gathered for a ribbon cutting at Los Cabos, 9 River Street, Thursday afternoon. A smaller version of the Mexican restaurant, called Los Cabos Snacks & Go, was located nearby a few years ago, on the corner across from Cafe Atlantique, but closed to expand into today’s dine-in restaurant. Trujillo-Macary owns the restaurant with family, including her brother, Jose Trujillo, and parents, Maria and Oscar Trujillo. Many of the dishes are based on old family recipes, and Yessica said the family plans to continue to expand. The ribbon cutting ceremony Thursday included mariachi music by the band Mariachi Son de mi Tierra CT.
